500 Calories a Day Meal Plan

“Instead of just telling you how to eat 500 calories a day, I did it. I’m a college instructor of the Science of Nutrition, and for 5 days my family ate 500 calories a day. The results were amazing.

Here’s a bit about how the three of us lost 17 pounds in just 5 days.

1. Choose your foods wisely. 500 calories a day is not a lot, so you need to choose foods that are high in volume to fill your stomach, and high in nutrients to “biochemically fill you up”, so your body doesn’t rebel and spike cravings.

We relied heavily on soups, salads and stir-fry for both volume and nutrients.

2. Eat two meals a day. Hunger is naturally stimulated when you eat, so we minimized how often we ate during the day.

Also, eating only two meals meant we could eat more at meal time.

3. Have a plan. Prepare all of your foods the day before you begin, and have an exact plan of how and when to eat them. You do not want to be running to the grocery store or trying to figure out your next meal halfway through the week.

4. Prepare mentally. When you have everything in place, success is down to the mental game.

Healthy Pumpkin Spice Pancakes

| Ingredients |
1 1/2 cups oat flour
2 tbsp Splenda, Truvia, or Ideal
1 tbsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
4 egg whites
1/2 cup raw pumpkin
1-1/2 cups unsweetened Almond Breeze

| Directions |
1. Preheat griddle to medium heat.
2. Mix oat flour, Splenda, baking powder, salt, cinnamon, allspice and nutmeg in a bowl.
3. Wisk egg whites and pumpkin. Mix in Almond Breeze.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray griddle with non-stick butter spray.
6. Scoop batter with a 1/4 cup measuring cup onto griddle. Cook 3-5 minutes on a side.

High protein smoothie recipe, Vegan Bodybuilding

“I decided to try filming something a little bit different today, and thought I would share my “go to” protein smoothie recipe. It’s a high calorie smoothie, but you can make it without some of the ingredients if you want to lower it to fit your macros. It’s ideal for people on a bodybuilding diet; I have it in the morning sometimes when I don’t have time for breakfast, or straight after a workout.

The main ingredients are:

1 x ripe banana
100 g strawberries
50 g blueberries
2 x scoops vanilla protein powder (I use either VeganSmart or Spirutein)

For extra calories (and taste) these are the optional ingredients:

200 ml Coconut water
20 g peanut butter (Whole Earth)
1 tbsp chia seeds (Bulk Powders)
7 g goji berries (Bulk Powders)

The recipe is suitable for vegan and vegetarian diets. Note that if you match the ratios above it’s 616 calories per serving. A full nutritional overview is included in the overview.

All the ingredients were blended together in my Nutri Ninja with a little bit of extra water for better consistency.
